vegan chili & super bowl snack guide
So as non-vegan who loves vegan food living with the least vegan person in the world, a 24 year old man-child named Blake, that since taking meat science class in college, thinks a raw slab of meat looks "delicious," I'm constantly trying to make vegan dishes that make him say "wait, this is vegan??"
If you haven't already noticed I'm obsessed with the soyrizo from Trader Joe's. We eat it at least once a week. So with the help of the trusty, wonderfully-flavored soyrizo I was able to get a "this is allllllllll vegan?" out of my animal protein loving boyfriend.
We're prepping for Super Bowl Sunday by trolling the internet to find exciting, delicious and maybe ridiculous snacks to make this game a little more exciting for us. Take a look at the bottom of the page for our big game food and beverage inspo!

1 tbsp olive oil
2 packages of soyrizo
1 large onion, chopped
2 garlic, chopped
3 tbsp chili powder
1 tbsp brown sugar
4 medium tomatoes, chopped
2 cups vegetable broth
1 can of black beans
1 can of corn
1 can of white kidney beans
Salt & pepper to taste
fix'n mix'ns: shredded cheese, tortilla chips, cor chips, sour cream etc.
In a large pot, heat olive oil over high heat and add in the soyrizo, or meat sub. Cook for about 4 min, breaking up any chunks.
Toss in onions, garlic and chili powder. Mix thoroughly. Cook for 5 min.
Add tomatoes, vegetable broth, salt and pepper. Bring this mixture to a boil, then back down to a simmer to cook for 15 minutes, stirring occasionally.
While that cooks, wash and drain the beans and corn.
Mix n the beans and corn, stirring occasionally and cook for 15 minutes.
Serve it up with some sliced avo and whatever other fix’ns you can think of!
